Product description

Black truffle juice is obtained by boiling fresh melanosporum truffles and this liquid essence resulting from cooking is called juice.

In other words, it is a full-flavoured concentrate of a real truffle, black to luminous brown in colour, reminiscent of the colour of soya sauce. In France, they call it cuisson.

At Laumont, we are proud of our authentic black truffle juice from Spain, first cooked and certified with the international IFS Food label. We carefully select, handle and pack it directly into the tin in our truffle and mushroom selection centres. Without any further intervention.

How to use truffle juice

You will never forget truffle juice melted into sauces. It gives an incredible colour and truffle flavour to hollandaise sauce, mayonnaise, rossini, beurre blanc or the classic périgourdine, as well as vinaigrettes, it can also be infused with other products, seasoned with purées or even flavoured with meat.

Chefs use truffle juice to enhance a recipe: truffle juice for soups as a finishing touch, it also gives character to stews and casseroles.

It is best to avoid using it as a stock, a reduction could turn the truffle juice into a salty juice because of its salt content.

It gives more flavour to sauces and it can be put in at the end of a sauce cooking recipe.

It can be used as caviar, in jellies, foams or can be mixed with gelling agent. In short, it can be worked in any way you like.
