Our premium dried morels are a gourmet mushroom with a high profit margin for restaurants, costing less than fresh morels and with a fixed market price. Choose recipes with morels as the centre piece for a high profit margin meal. They can even be more profitable than meat and fish dishes on the menu.

Dried morels are the same morels we sell fresh, hand-picked and harvested in their best season. Normally, they’re hard to find. But we make it easy for you.

The 500g presentation of dried morels is equivalent to 5 kilos of fresh morels. This practical bag contains small, elegant, high-quality morels, carefully packaged to preserve the whole pieces. Thanks to a long shelf life, you can store them in the pantry for months, or even years, until you need them.

The morels are commonly used in their dried form as the season is often scarce and random, making fresh harvesting, which usually takes place in spring, difficult. This is one of the reasons it’s considered a gastronomic treasure and is so highly valued. It’s also considered a unique mushroom visually, as it’s unique morphology marks it out as different from other species, with shape similar to that of a tree and a spongy texture.

How to use dried morel mushroom

Morel mushroom or Morchella Deliciosa is the star mushroom that’s a must in any quality restaurant. Many prestigious chefs, such as our ambassador chef Martin Berasategui, combine it with foie gras, veal, cod… adding a touch of magic to any dish.

Some recipes are better with dried morels over fresh morels. Their flavour is more concentrated, so they give more depth to creams, stews and delicious risottos.

Rehydrated morels double in size. Remember that when dry they are one tenth of their original weight.

Depending on the size, there are several ways to make use of them. The larger ones are ideal for stuffing, and the smaller ones are great as a visual decoration or garnish for meats and poultry.

It goes brilliantly with fatty foods: foie gras, parmesan, butter.

How do you hydrate dried morels?

Morels are special mushrooms that have to be dried with great care as they can give off a certain toxicity.

The morels should be completely immersed in water and boiled for at least 30 minutes until fully cooked. Then add to any dish or stew. Discard the cooking water.

Once hydrated, they can be used as if they were fresh and they’ll increase to about 10 times the size. (10g dried mushrooms = 100g fresh mushrooms).
